"Kaze ga Fuitara," or "When the Wind Blows," is a tribute to this moment—a sake that deepens and grows more comforting as the seasons change.


It’s for those evenings when you return home from the cold, ready to welcome the first tastes of the harvest with a truly special sake.


A Richness Born from Tradition


To capture the profound flavors of early winter, we turned to a special brewing technique: Tomizu-jikomi.


This method uses 10-20% less water than typical brews, creating a highly concentrated moromi (main mash) that allows the innate power and flavor of the rice (polished to 70%) to emerge in full force.


The resulting sake is exceptionally rich and full-bodied, yet it avoids being heavy, finishing with a remarkable lightness and a crisp, clean edge.

Because of its high alcohol content and concentrated flavor, diluting it with 5-15% water can soften its profile and reveal new, subtle tastes.
